It's ALL about the light! (Yes, that's a "cardinal rule" of photography.) So, shoot landscapes and scenery at the RIGHT TIME OF DAY. Sunrise (get a strong cup of coffee and grab your photo bag) and sunset are the best times. The light is not so harsh, and colors will not wash out. Check out the exact minute the sun rises and sets on Sundroid, an app for Android phones. It's free, and it will help you determine when the light is best.
Don't the lack of sunlight keep you from snapping the shutter. Simply grab a tripod, and set your shutter to a slow speed. It's really NOT difficult (you CAN turn the dial) and you will most likely be amazed at the images you can create in nearly dark settings.
